Made some shrimp and chorizo quesadillas for dinner

    ...with homemade 'smoky' guacamole - was delicious and filling, a real man's meal. :)

    Here's what I based the recipie on - I followed it pretty much to the letter, though I couldn't find ground chorizo at my grocery store - so I substituted Johnsonville Chorizo sausages (about 2 1/2 large sausages cut into small bits) - also replaced large Mission brand Jalapeno cheddar wraps for generic white tortillas (the wraps I bought were big, so I ended up making 3 very large quesadillas, even though he claims his recpie makes 8 - you could always cut them in half if you go my route). I also added a few red pepper flakes when browning the shrimp for a little extra spicy kick.

    Lastly my cheap Oster blender wasn't able to blend the quacamole, but if you don't have a blender that can do it, you could always just blend by hand and it should turn out fine.
