Some useful tips

    I do most of the cooking at home, Mrs AB cleverly butters me up by constantly telling me I'm a better cook (true).

    Tip No 1: This came from the owner of the best Chinese Restaurant in Wellinton, NZ. To make meat tender, simply sprinkle it liberally with corn flour, then soy sauce. Then get your hands dirty mixing (great if you've got kids).

    Tip No 2: This is my own. When frying rice, add a slurp of Thai fish sauce and a couple of tsps of sugar.

    Tip No 3: Again my own. When making a stew, scour the cupboards for anything you can find. Old jams, sauces, chutneys, throw them all in. Above all, don't use water, that's for wimps. For liquid, use beef stock or red wine. Then simmer it for hours. Turn it off, then simmer it again and again. The more often you do this, the better it tastes. Stand guard over the pot, the aroma will drive the family crazy.
