What sorts of cheese do you like?

    Personally I like Swiss cheese very much - Schweizerkäse, as wie say in Germany.

    The Swiss have other words for it.

    Emmentaler - or so ....

    I like different cheeses for different things. I always go for bleu cheese on salads and burgers. I like grated parmesan on mushier foods to add in some texture and balance out the gunkiness. I like aged white cheddar on sandwiches. Brie and fresh mozzarella are the only cheeses that comes to mind that I really hate.

    Being from Wisconsin, I love my cheese.

    For hamburgers, I am a huge fan of pepper jack, mild cheddar, and muenster.

    For my sloppy joe sauce/hamburger "chip dip" recipe, I like to add some shredded mild cheddar and shredded mozzarella to it.

    I am not opposed to other types of cheese, such as colby jack, american, provolone, and others, but I just don't have them very often due to my love for pepper jack especially.

    Applewood smoked cheddar is a favourite.
    Great for spicing up a lasagne or macaroni cheese.

    I actually crave fresh mozzarella with tomatoes in a sandwich.....but short shelf-life plus expense keeps me from buying it.

    Deliciously salty taste with a lovely squeaky texture.

    Where it is called "fromage blanc" or "Bibbeleskääs" in the alemannic language (or dialect) that we speak on either side of the River Rhine.

    Goat
    Greyere
    All the Blue style
    Queso Fresco
    Fresh Mozzarella
    Almost all the rind ripened and grating cheeses
    Brie
    Feta

    I really only dislike Swiss, unless it’s on a Reuben.

    Even the fresh? The low moisture can certainly be that way, if it’s not good quality.

    Different stroke for different folks. A lot of people think bleu cheese is vile but I like that tangy musty flavor profile. Avocado I can eat, but it is not something I go out of the way to buy a fresh one more than once a year or two. Plus there is some political umph about them I don't really know the particulars of like some from some places are akin to blood diamonds or something.
