    moonlight sonata is the best for my tastes, its good to listen to with my evening glass of wine.

    hahahahaha, a wiseguy!

    I was so disappointed yesterday. And even with open windows and a fan in the wee hours, and A/C at sun up, there is still a slight hint of smoke inside.

    I always joke, but yesterday could have been serious. ...it was that close to erupting, seriously. Scared the hell outta me. lol


    ** Fortunately, I had placed a lid over the sausages, otherwise I'm confident the grease from them had gotten hot enough to flame.**

    Stay in the kitchen while cooking, observe closely.
    Appliances, esp stove tops come with regulators...choose the appropriate temp.
    Stay in kitchen and observe.

    Boil some water with lime, takes out the weirdest smells.

    Finally, stay in kitchen and observe....choose the correct temp.

    Now you can call me a wise guy.

    The thing about the sausages is, I don't eat them (two) as a meal themselves. I cook a couple, and use them for flavor over maybe 4 or 5 meals. I always do the onion/garlic/carrots/celery/tomatoes and tomato paste fresh with each meal adding the leftover sausage at the end. Thus the frustration yesterday.

    But it still works out fine, just minus the sausage flavor for the next few evenings. lol

    Cook them slowly, low to medium heat. Don't cook them all the way through, then finish the portion you wish to use.
    Leaves more flavor, keeps your sanity.

    Seriously, I don't have to be concerned of bacteria or whatever, by partially cooking them, then storing in the frig?

    Obviously, I have done the opposite (cooking through), then saving.


    *these are pork... sometimes a mix of pork and lamb. The pork I've always been a little more cautious with.

    ...anything to impart more of the flavor.

    I really do appreciate the advice Shang. I know I constantly joke (I'm trying to cut back, lol), but I can also be serious too, when need be... especially about my food!

    Yeah, I'm kind of back again. Things are going well. The only thing really on my mind is Tropical Storm Debby. It really needs to come to our neck of the woods (the farmers need it badly, especially after the last cold front.. more like fail front), so would be a good thing to wish it heads in your direction? We just need it to head west enough that it will boomerang back towards us.

    Nice to see you again, Indy! OT's been making us all jealous with his reports of cool weather -- least we can do is pray for rain in your neck o'the woods!

    Hot & sunny here. No big surprise, huh? 96 right now. Dang hot. Sat out in the sun for about 30 min earlier... under the mister on my patio. Only way to keep from coming out looking like Ange's charcoaled sausages. ;)
