    Eggplant: Microwave, peel, mash, add caramelized onions, hot pepper, simmer with a little water for 30 mins - add shrimp or crawfish - simmer 15 mins - serve over rice.

    Easier than doing the same thing with mirliton - similar result.

    With all due respect to your culinary efforts, will you be offended if I pass? Anything of the squash family, must be served semi-firm, or I will have unpleasant recollections of baby food that I was served when I had my wisdom teeth out.....

    Anything with crawfish and scotch bonnet ain't baby food.
    If you like creole gumbo or etouffee try it - you'll probably like it. :)

    My greatest sadness is my food allergy to pepper, black, white or red. It sooo limits my passion for food.

    I've been known to 'fake it' with a recipe of shrimp and grits that I adore - no pepper or paprika, but a stout shot of key lime. ;)

    Not so small ... Facebook world.Just use the internet to research stuff
    like nylons and see how many Nylon makers know all about yer leg
    size or udder.
    BTW ... There is luck in many aspects of Life.Like the age of a Pet.
    But luck alone is never a wise proposition.Some folk define success as
    80 % or more skill and being in the right place at the right time.With
    maybe 20 % making up luck.

    That is a bad allergy to have. Has an allergist verified that it is really an allergy?
    I often take preemptive Gaviscon after eating something as hot as a dish with scotch bonnet.

    that Elst { the town of } is just 5 miles from Arnhem and probably free of
    any Facebook dalliances.

    Eggplant Parmesan

    Peel the eggplant and start to slice from the round end. Slices are about 1/4 thick.
    Dredge in egg/milk mix.
    Bread with breadcrumb mixture.

    Bread crumb mixture.
    Plain breadcrumbs
    salt/pepper/paprika
    Pecorino Romano Italian fresh grated cheese. Never already grated and never the grated cheese in a bottle. There is a huge difference with fresh grated.
    No oregano because I don't like it but if you like it add it.

    Quick fry until golden brown
    Out of the pan on paper towels to absorb any oil. If that oil is hot enough there should not be a lot of oil to drain off. Hardly any. Then lightly salt.

    Baking dish
    Gravy on the bottom
    eggplant
    More gravy on top
    More fresh grated Pecorino Romano grating cheese
    Slices of Mozzarella

    350 covered with foil to heat up.
    Uncover to quick brown the Mozzarella

    Delicious.

    *Edit to add
    I edited to add Pecorino. There are different types of Romano cheese. Some are made with cow's milk, sheep's milk and goat's milk. Pecorino Romano is made with sheep's milk. That's the one I always use.

    Well, I have not been to an allergist, but when one eats food that obviously has pepper in it, and one's lips, tongue and mouth begin to itch and burn, the tongue swells and you wheeze if you didn't catch it in time, I'd be calling that an allergy. I haven't needed an Epi-pen yet, since I can taste the pepper virtually immediately on first bite. Only very few times I've made it to a second or third bite before it hits.

    Yes, it's highly unusual, and it developed in my 20's. My sister (older) used to laugh at me, until the day she started having a reaction also. It seems it's becoming more common, as I never used to be able to find information on it.     I used to fix an eggplant dish.Sliced around 2 inch thick and
    marinated in milk w/soy sauce.Then dipped in seasoned flour
    and sautéed in olive oil.Lightly seasoned with pizza seasonings.
    It could be placed in the fridge for leftovers.Thr trick is to know
    how hot to sautee.Plus not to burn.Until browned on both sides.
    I haven't fixed in years due to Eggplant is seasonal and I gave
    up using Soy Sauce.Because it's basically just dark liquid sodium
    in a bottle.

    That is unfortunate. You will miss out on a lot of great hot spicy dishes, but there are endless alternatives. Even black pepper is optional.
    Most spices are not hot.

    They have low sodium soy sauces. They are not as good. But not bad.

    I'm not a fan of the 'spicy' stuff, I don't find having to keep a fire extinguisher handy while I eat dinner high on my list. The spouse, on the other hand, will spice things up to degree that his eyes water freely... and he thinks it's the best thing since sliced bread. *shrugs*

    Hes doing good. Doc had to convince him he needed a skin graft but dad told him he didnt want to have to come back to remove stitches, so doc used self dissolving sutures so he doesnt have to go back for 6 months. No doubt he has other spots that need attention, but hes not agreeable to a full body scan. Basically, hes sick of doctors and just wants some peace. At 92, the only time hes been hospitalized he was in his 30s having a hernia fixed. Hes not diabetic, has no other health issues, eats fast food, fried food, meat, poratoes and sweets. If he hadnt spent his life on the golf course, he'd prob make it to 100. Unfortunately, recurring skin cancer will likely be his downfall. Btw, he weighs 120 lbs mainly because hes never still very long.

    A Louisiana girl took me with her to meet her family when I was 21.
    I have liked it hot ever since. :)
