Good morning everybody. Well here it is the last day of vacation. All momma wants to do now is just rest and relax. So I guess that it is time for me to go back to work to. So enjoy.

That price seems fair to be able to enjoy snow year round! I love the cold and I especially love the snow. Summer is not my favorite time of year. Aside from the garden and it being green the heat is draining. There is nothing like the feeling that snow is on the way and its cold and the air is crisp. Or the feeling of looking up in a snow storm and watching the snow fall and landing on your face. I love it!

You're pictures are beautiful OTimer and I always look forward to you posting them.

    TGIF youse guys!!! :)

Looks like we're all set for food and desserts. I especially like gypzy's dessert offerings! Windy and warmish here today. It can't decide whether to be spring or fall out there, but I'm not complaining, no sirrrreee!

Congrats to Shangrila! We sure are building an important clientele in the bar, aren't we? Love it!

Let's get this one over with!

Everyone is so happy about Friday. When you have to work even weekends, it almost doesn't matter.
Take each day at a time.
Thanks for the condolences btw. :-D

    'mornin y'all guys! (compromise)

72 degrees at 9 am works for me. Really don't know how you snowbirds stand all that cold! Great breakfast, OT. Shangrila's right... we were wasting away here without you. Booze for breakfast prob isn't too healthy.

Haircut & grocery shopping on the agenda for my day off. Woo hoo! I really need to stop all this wild living. ;)

Hey, Kimi! Check this out. Ran across it the other day and was ROFLMAO. Mikey, Mary & Frogger too, if you're around. Good times in the old 'breakfast club' --

    Smartmouthwoman Busted!

Enjoy your TGIF, y'all! Hope everyone has a good weekend -- we've got rain in the forecast! Now that would be a rarity!

HA HA....you just THINK you're retired. Mama's had you pretty busy this week, and you've spoiled us all to those great breakfasts. Yeah, just keep on believing you're retired *wink*

Exactly! I've had brief periods in my life when I didn't have to go to a job every day, and I learned don't let people know it. You're too handy for little favors here and there.

I guess that means The Beartooth Pass is closed. Last year when we were there it was closed for repairs or something. Someone told me they close it after the first snowfall. Have you traveled it yet? It is awesome.

No, I haven't been up there for a few years now. But if it isn't closed yet it will soon be.

Oh I see we have a Texas chili recipe problem here. Hmmm..Ok I'm making Texas chili and thats it.

    Cut up lon..don..broil sautéed.
    Tamadah
    onion
    garlic
    hot and sweet peppers
    adobo
    chili powder
    cumin
    cilantro
    olive oil
    a little brown sugah
    paprika

    slow cook.

Now my question to the Texas chili recipe chickens is this. does that meet fall apart or is it cooked to death to fall apart? Ive made chili with chopped meat and beans. Is the consistency the same with chunks of meat in the end or is it chunky like meat in stew? Also, what am I missing in those ingredients?

Ill be shocked if its like stew. I am seriously going to make this Sunday.

I wanna make fishing flies this winter and buy a flute so I can learn to play this. It may take years but so what? lol This flute music can just take me away! I love it!

You know I reread that recipe and its just meat and tomato. It needs something else. Seriously!

OK, Miz Chili Queen... here's a link to a discussion about the best meats to use for Texas chili. Whatever you use needs to be cut into bite-size pieces, not chunks like stew meat. 1/8 to 1/4 inch cubes work best and like anything good, needs to have a little fat. Ground beef doesn't work too well.

LOL, I'm making beef stew this weekend. Sounds like winter can't be too far away!

Here is the recipe for "Pedernales River Rat" Chili. It was the 1988 Terlingua International Chili Championship Winner.

    Ingredients
2 lbs - "Chili Grind" Beef Chuck Roast
    1 tbs - Bacon Grease

    Bag #1
    3 tbs - Chili Powder
    1 tsp - Garlic Powder
    2 tsp - Onion Powder
    1/2 tsp - Black Pepper
    1/2 tsp - Salt
    1/2 tsp - Cayenne Pepper

    Bag #2
    3 tbs - Chili Powder
    1 tbs - Cumin
    2 tsp - Garlic Powder
    1/4 tsp - White Pepper
    1/2 tsp - Oregano Powder
    Pinch - Basil
    1/2 tsp - MSG (Optional)

    Other Ingredients
1 can (14-1/2 oz) Swanson Chicken Broth
1 can (14-1/2 oz) Swanson Beef Broth
1 can (8 oz) Hunts "No Salt Added" Tomato Sauce
    1 Knorr Beef Bullion Cube
1/2 tsp - Light Brown Sugar

    Cooking Instructions
Heat Bacon Grease in cooking pot until very hot (smoking)
Add "Room Temperature" meat, grey until it starts to make it's own juice
Stir continuously, add both cans of broth, and 1/2 of Bag #1
Cook covered at a medium boil for 45 minutes
Uncover and stir every 10 minutes
    Add water as needed
After 45 minutes, add the rest of Bag #1
Add tomato sauce is tender, and add Bag #2
    Add 1 beef bullion cube
Add 1/2 tsp light brown sugar

Use the following to season to taste:
    Salt
Cayenne Pepper - for hot front taste
White Pepper - for hot front taste
Brown Sugar - for a sweeter taste

Ready to eat - Better the next day

The only problem I have with Lynn Hejtmancik's recipe is the length of cooking time.
I believe good chili should be slow cooked for hours -- guess that's why he suggests his recipe is better the next day.

As you can see, Chili is serious business 'round these parts. Terlingua Int'l Chili Cook off

There are dozens of prize winning recipes there to choose from, Fa.

    C'ya Sunday...can I bring my dog?

EDIT: I'll ditto this post from your link, SMW
do you suppose he meant all-chuck or all-chunk? I'm going with chuck.

Hah, got y'all beat. I ate all the beans Yankee didn't put in her chili, and now am ready for lift off.
Cornbread turned out great as well. Added some of the bean broth to thin out the dough. Yum.

Smartie, how do you like that new haircut of yours. Its the second time you have it cut, right?
