Cornbread stuffing ('dressing' in the south, y'all) for me... yours sounds yummy, though. Do you actually stuff the turkey with it, or is it served as a side dish?

My grandmother use to stuff the turkey with it but I do it on the side. They like it better that way.
I forgot its called dressing. Whats in it besides cornmeal?
The sausage stuffing has staled good crusted Italian bread, Italian sausage, celery, onion, romano cheese, eggs and I use milk because my grandmother did but my sister used turkey broth. Mine was always better. lol
    Grandma's know best.

Looking into frying a turkey outside, dig a hole in the front yard and lower it in with a rope.

There's many reports of house fires every thanksgiving from deep frying the turkey indoors, so its not best to do it indoors.

    Sorry, got sidetracked...

Yeah, cornbread dressing. When Mom made it, I was always the official taster... more sage? is the eternal question. We like lots o'sage down here.

This is a good recipe, but we also add chopped boiled eggs. It's best if baked til there's a nice crunchy top. Mmmmm, dressin sammiches are goooooood!

    Southern Cornbread Dressing

This home-style cornbread recipe is made with fresh cornbread crumbs and optional diced chicken.

    Yield: Serves 10 to 12

    Ingredients:
    •6 cups crumbled cornbread
    •3 cups soft bread crumbs
    •4 ounces butter
    •2 cups onion, chopped
    •2 cups finely chopped celery
•3 to 4 cups chicken broth
    •2 cups chicken, diced, optional
•1 heaping tablespoon dried sage, crumbled
•1 1/2 teaspoons dried leaf thyme, crumbled
    •1 teaspoon dried marjoram, crumbled
    •1/2 teaspoon dried rosemary, chopped
    •1 teaspoon salt
•1/2 teaspoon freshly ground black pepper
    •2 eggs, lightly beaten

    Preparation:

Heat oven to 400ºF. In a large mixing bowl, combine the cornbread and white bread crumbs. In a saucepan over medium heat, sauté the onion and celery in butter until tender. Do not brown. Combine the sautéed vegetables with the bread mixture. Stir in chicken broth, using enough to moisten. Stir in the diced chicken, if using, and the seasonings and beaten eggs, blending well. Spread the mixture in a large shallow baking or roasting pan measuring about 10" x 15". Bake for 20 to 30 minutes.

    ?

Like put a deep fat frier in with a turkey in it? In a hole outside?

I am imagining a hole in the ground filled with oil and you dropping fire heated stones into it. Which I know can't be right.

Its a big pot that we will fill with oil, and dig a hole in the front yard so if anything spills nothing catches on fire. When this is done inside, the oil is heated to above the flaming point, and if it touches any flammable surface is it will start a fire quickly and it has the potential to spread very quickly as well.

So doing this outside prevents the risk of fire, its the first time I can't find anyone that sells fried turkeys nearby here.

late edit: Oh and it will be heated with charcoal like a grill, and there is going to be a metal grill on top for the pot to level on. It will be like an open grill in a pit, with a pot sitting on top the grill.

Luby's Cafeterias sell whole fried turkeys... jus sayin. That's a lotta trouble for a bird, LM. How much is the oil, about $50?

Speaking of holidays... this is cute if anybody wants to make 'em for Christmas. Better hurry if you're gonna use HoHo's though.
